Spicy spinach and mushrooms with fried leek
Ingredients:
- ½ lt Vegetable Oil
- 1 Leek, just the white part finely chopped
- 3 tsp Coconut Oil
- 1 Garlic Clove, finely chopped
- 400g Chopped Mushrooms
- 2 packages of Mini Spinach Leaves (300g each)
- 1 can of San Marcos Rajas (215g)
- Sea Salt and Pepper
- Yellow Lemon Juice
Instructions:
01. Heat the oil in a big pot and fry the leek.
02. Heat the coconut oil and fry the garlic. Add the rajas, mushrooms, spinach leaves and cook. Serve and sprinkle the leek on top.
San Marcos tip: These vegetables are perfect for an omelet.
