Ingredients
2 cups nixtamalized corn dough (masa)
1 cup refried beans
1 cup crumbled fresh cheese
1/2 cup finely chopped red onion
6 tablespoons San Marcos Mexican
Salsa Salt to taste
Vegetable oil for cooking
Preparation
Divide the masa dough into 8 equal portions and roll each into a ball.
Flatten each ball and place a spoonful of refried beans in the center. Fold and shape into an oval.
Cook the tlacoyos on a comal or skillet over medium heat for 3 to 4 minutes per side. Add a little oil if you desire a crispier, golden texture.
Serve hot, garnished with crumbled fresh cheese, diced red onion, and San Marcos Mexican Salsa.
Enjoy as a delicious breakfast or dinner option.
