Spit-Grilled Pork Tacos

Ingredients
1.1 lb pork, cut into strips
3 tablespoons San Marcos Chipotles in Adobo
2 tablespoons adobo sauce from the can
2 cucharadas de aceite vegetal
2 tablespoons vegetable oil
1/2 cup diced pineapple
1/2 cup chopped white onion
1/2 cup chopped fresh cilantro
8 corn tortillas
Salt and pepper to taste
Preparation
Marinate the pork strips with San Marcos Chipotles in Adobo, adobo sauce, salt, and pepper. Let it rest for 15 minutes to absorb the flavors.
Heat oil in a skillet over medium-high heat and cook the pork until golden brown and cooked through.
Warm the tortillas and assemble the tacos by filling them with the cooked pork.
Top each taco with pineapple chunks, chopped onion, and fresh cilantro to taste.
Serve hot, adding extra chipotle sauce if you prefer additional heat.
