Ingredients

  • 1.1 lb pork, cut into strips
  • 3 tablespoons San Marcos Chipotles in Adobo
  • 2 tablespoons adobo sauce from the can
  • 2 cucharadas de aceite vegetal
  • 2 tablespoons vegetable oil
  • 1/2 cup diced pineapple
  • 1/2 cup chopped white onion
  • 1/2 cup chopped fresh cilantro
  • 8 corn tortillas
  • Salt and pepper to taste

Preparation

  • Marinate the pork strips with San Marcos Chipotles in Adobo, adobo sauce, salt, and pepper. Let it rest for 15 minutes to absorb the flavors.
  • Heat oil in a skillet over medium-high heat and cook the pork until golden brown and cooked through.
  • Warm the tortillas and assemble the tacos by filling them with the cooked pork.
  • Top each taco with pineapple chunks, chopped onion, and fresh cilantro to taste.
  • Serve hot, adding extra chipotle sauce if you prefer additional heat.
