Ingredients

  • 3 ripe plantains
  • 1 cup refried beans
  • 1 cup crumbled fresh cheese (queso fresco)
  • 1 cup guacamole
  • 6 tablespoons of San Marcos Molcajete Green Mexican Salsa
  • Vegetable oil, for frying
  • Salt, to taste

Preparation

  • Cook the plantains with their skins on in boiling water for 15 minutes. Peel and mash until you achieve a smooth puree.
  • Shape the puree into small croquettes. Fill each croquette with a spoonful of refried beans and cheese.
  • Fry the croquettes in hot oil until they are golden and crisp. Drain on paper towels to remove excess oil.
  • Serve the croquettes topped with a spoonful of guacamole and drizzled with San Marcos Molcajete Green Salsa.
  • Enjoy warm as an appetizer or savory snack.
