Banana Croquettes
Green Mexican Salsa
Sweet plantain, stuffed with beans and cheese, and crowned with guacamole and the fresh vibrancy of green salsa.

3 ripe plantains
1 cup refried beans
1 cup crumbled fresh cheese (queso fresco)
1 cup guacamole
6 tablespoons of San Marcos Molcajete Green Mexican Salsa
Vegetable oil, for frying
Salt, to taste
Preparation
Cook the plantains with their skins on in boiling water for 15 minutes. Peel and mash until you achieve a smooth puree.
Shape the puree into small croquettes. Fill each croquette with a spoonful of refried beans and cheese.
Fry the croquettes in hot oil until they are golden and crisp. Drain on paper towels to remove excess oil.
Serve the croquettes topped with a spoonful of guacamole and drizzled with San Marcos Molcajete Green Salsa.
Enjoy warm as an appetizer or savory snack.
