Holy chicken salad with rajas

Ingredients:

 

  • 290 gr of San Marcos Rajas
  • Ground black pepper and salt to taste
  • 1 chicken breast
  • 2 carrots
  • 1 can of corn
  • 2 celery sticks
  • ½ onion
  • 3 tablespoons cream
  • 4 tablespoons mayonnaise
  • 3 tablespoons San Marcos Vinegar
  • Coriander to taste
  • ½ tablespoon English sauce

Instructions:

01. Wash and finely chop the vegetables and drain the corn.

02. Cook the chicken and shred it.

03. Mix the chicken with the vegetables and add the coriander, salt and San Marcos Rajas.

04. Put this mix in the refrigerator to keep the tostadas crispy.

05. ¡Enjoy!

Chipotle pasta and sausages fallen from the sky

Ingredients:

 

  • 290 gr of San Marcos Chipotles
  • 10 sausages
  • 6 tomatoes
  • 1/8 onion
  • 2 garlic cloves
  • Salt to taste
  • 200 gr of your favorite pasta
  • ¼ sour cream

Instructions:

01. Cook your pasta in 1 liter of water for 15 minutes and drain it.

02. Grill your tomatoes.

03. Cut the sausages into strips and fry them in a pan.

04. When your tomatoes are already roasted, add them to the blender with the onion, garlic cloves, San Marcos Chipotles and water. Keep half of that sauce apart.

05. With the other half, season the sausages in a pan and let that cook for 15 min.

06. Boil the other half of the sauce in a pot with a pinch of salt and the sour cream and integrate everything.

07. Add the pasta and let it boil for a while to get the sauce flavor. Enjoy the glorious taste of our San Marcos Chipotles!

Divine ropa vieja

Ingredients:

 

  • 290 gr of San Marcos Chipotles
  • 1 kilo of beef, cooked and shredded
  • 2 liters beef broth
  • 8 bay leaves
  • 4 thymes
  • 4 sprigs of marjoram
  • 2 teaspoons salt
  • 4 cooked potatoes in cubes
  • 2 cups of tomato puree
  • 1 teaspoons oil

Instructions:

01. Add some oil in a casserole and add the tomato puree, beef broth, marjoram, thyme, bay leaves and salt. Let it cook for 10 minutes.

02. Add the meat, potatoes and San Marcos Rajas to the broth and let it cook for 5 minutes.

03. Season with salt and pepper.

04. Enjoy a divine meal!

Spicy hawaiian codito

Ingredients:

 

  • 290 gr of San Marcos Rajas
  • 1 bag of codito soup
  • 400 ml sour cream
  • 8 pineapple slices
  • 8 bacon slices
  • ½ onion
  • Salt to taste
  • 2 tablespoons butter

Instructions:

01. Boil a liter of water with the onion. Once it boils, add the pasta and cook for 10 minutes. Remove from heat, strain and let drain.

02. Chop the bacon and reserve. Chop the pineapple and the onion into small cubes.

03. In a saucepan, melt the butter and fry the bacon. Add the onion and pineapple.

04. Add the pasta and let it cook for 3 minutes, add the San Marcos Rajas and season.

05. Add salt to taste, and you are done!

Yielding tips

Less animal protein, more vegetable protein. Meats and derivatives are not the only source of protein we have to nourish ourselves; the plant world also offers us this possibility, and legumes are a good example of this. Replacing the proteins will not only help you to have more balanced dishes but also to save on the expense.

Picadillo with chipotle, potatoes and carrots

Ingredients:

 

  • ½ Kg Ground Beef or Soy
  • 2 Chopped Garlic Cloves
  • 1 tsp Salt
  • ¼ tsp Black Pepper
  • 1-2 San Marcos Chipotles
  • 1 Bay Leaf
  • ¼ cup Vegetable Oil
  • ½ Chopped Onion
  • 1 cup Tomato Puree
  • 3 Red Tomatoes (blended and strained)
  • 2 Carrots chopped in squares
  • 2 potatoes chopped in squares

Instructions:

01. Season the meat with garlic, salt, pepper, chipotles and the bay leaf. Let it sit for 20 minutes.

02. Heat the oil and add onion. Then you can add the meat and cook, mixing until you get picadillo.

03. Add both purees and the vegetables, cook at low heat for 25 minutes. Add water if needed.

San Marcos tip:
If you use soy, hydrate it by seasoning the water with the ingredients in the first bullet.

Pork feet

Ingredients:

 

  • 1 Kg Clean Pork Feet
  • 2 tsp Salt
  • ¾ Chopped Onion
  • 5 Garlic Cloves
  • 2 Peppers
  • 2 Branches of Thyme, Marjoram and Oregano
  • 4 Bay Leaves
  • ½ cup Olive Oil
  • 2 Chopped Carrots
  • 1 can of San Marcos Rajas (205g)
  • ½ cup of San Marcos White Vinegar

Instructions:


01. In a pot, put the pork feet and cover them with water, add salt, ¼ onion, 2 garlic cloves, pepper and half the herbs.

02. Let it cook for 1.30 hour and drain.

03. Heat the olive oil and add the remaining onion, garlic and carrots. Cook until soft and add the rajas with their vinegar, the white vinegar and the herbs and salt.

04. Cook for 5 minutes and add the feet , let them sit overnight.

San Marcos tip:
Make your tostadas, you just have to take the bones out of them and chop them.

Pineapple and vanilla dessert with coconut cookies

Ingredients:

 

  • 1 can of San Marcos Pineapple Slices with Syrup (560gr)
  • 2 Tbsp Unsalted Butter
  • 2 Sachets of Unflavored Gelatin (14g)
  • ½ cup Condensed Milk
  • 1 cup Milk
  • 2 Eggs
  • 200g Chopped Coconut Bars
  • ½ cup Greek Natural Yogurt (optional)
  • 6 Peppermint Branches (optional)

Instructions:


01. Chop the pineapples and set the syrup aside.

02. Caramelize the butter with the pineapple chunks and divide in three parts.

03. Mix the gelatin sachets with ¼ cup of cold water and let it curdle. Pour into a pot filled with milk, heat and let it dissolve.

04. Blend the eggs with the condensed milk, vanilla and gelatin mixture.

05. Pour half of that mixture in 6 different glasses and refrigerate until hard. Then, add one Tbsp of pineapple chunks and fill each glass with cookies, add more milk mixture and let it sit. Serve and decorate with the remaining pineapples and cookies.

San Marcos tip: You can add one tsp of Greek yogurt and peppermint leaves as decoration.

Bean and red sauce burritos

Ingredients:

  • 1 jar of San Marcos
  • Red Sauce
  • Flour Tortillas
  • 1 can of San Marcos Refried Beans
  • 100g Chorizo
  • 150g Grated Cheese
  • Oil

Instructions:


01.
Fry the chorizo and add beans and cheese. Then you can add sauce, but make sure the consistency remains the same.

02. Fill the tortillas with the bean mixture and roll them in a burrito shape.

03. Heat them and serve.

San Marcos Tip. You can also fry them in oil.

Roasted salmon with tzatziqui chipotle and yogurt sauce

Ingredients:

Tzatziqui Sauce (2 ½ cups)

  • 1 Peeled Cucumber in Half
  • 2 Lemons (zest and juice)
  • 2 cups Greek Yogurt
  • 2 Tbsp Finely Chopped Fresh Dill
  • 2 Tbsp Finely Chopped Fresh Mint
  • 1-2 Tbsp San Marcos Chipotle Sauce
  • Salt and Pepper

Salmon:

  • Salt and Pepper
  • 4 Slices of Fresh Salmon with Skin (230g each)
  • 1 Orange (juice)
  • 2 Lemons (juice)
  • 1 Tbsp Olive Oil

Instructions:


01. For the sauce, grate the cucumber, drain and wait until it’s not longer wet. Mix the cucumber with the lemon juice, yogurt, dill and mint. Season with Chipotle Sauce, salt and pepper.

02. For the salmon: Preheat the oven at 200 ºC, season the fillets and marinate with orange and lemon juice in a glas container for 30 minutes.

03. Rub the salmons with olive oil, the skin has to be facing down. Bake and serve with tzatziqui sauce right after.

San Marcos tip: You can use tuna or any other fish.
